Lacy Oat Cookies

 

It's like a praline, only it's a cookie! And if you were never a fan of pralines, this cookie will definitely change your mind. Likewise, if you are not an oatmeal cookie fan, be prepared to be one now. These Lacy Oat cookies are easy to make, they're quick, and sorry, they're totally addictive. These little lacy flavor explosions have no flour. Imagine that, just oats, toasted nuts and a little bit of caramel magic. They're the perfect chewy, crisp complement to our milk (vanilla toddy) and cookies dream team.

You can stay up late on Halloween savoring these adult treats. And what about those midnight cookies for Santa? These little naughties could be really nice.

Ingredients
11/4 cups rolled oats
1/2 cup (or a bit less) dark brown sugar (India Tree dark brown muscovado is delicious)
1/2 tsp baking powder
1/2 cup toasted walnuts
1/2 cup toasted pecans
1/2 stick dairy or vegan butter, melted and browned
1/2 organic egg, beaten (that was fun)
1/2 tsp vanilla
pinch or two of sea salt

Recipe
makes about 12 cookies. Double the recipe if you desire more as you likely will.

Preheat oven to 350 degrees. Melt butter until browned and set aside to cool. Toast walnuts and pecans and set aside to cool. Mix oats, brown sugar, salt, and baking powder together in a large bowl. Stir in the melted brown butter, the half-beaten egg, and vanilla. Chop cooled nuts into small pieces and mix into the batter. The nuts can cause the cookies to crumble and fall apart therefore smaller pieces help  them stay together better.

Grease a cookie sheet. Drop the dough onto the sheet with a tablespoon and press each cookie really flat with the back of the spoon or a small measuring cup. Bake about 10-15 minutes or until cookies and especially the edges are browned. The lesser baking time creates chewy cookies, longer gives a crispy cookie. Cool almost completely before transferring to a plate.
