Warm Winter Apples

 
Apples are one of the symbolic celebrations the season.  They herald that the harvest is in.  This delicious recipe for Warm Winter Apples makes a lovely breakfast or a satisfying, healthy dessert.  Tart apples juxtapose the sweet flavor of cinnamon (good for balancing blood sugar) and are accompanied by a spicy nip of nutmeg.  The ingredients are fragrantly wrapped in the scent of vanilla which always works to calm our senses.  These warm apples are a perfect expression of the season.

Warm Winter Apples are simply perfect on their own.  They are also delicious served with granola, topped with toasted nuts or toasted buckwheat and warm milk.  The apples go beautifully over oatmeal with yogurt, and the addition of fresh seasonal berries or pomegranate seeds.  They make a fabulous crepe filling or topping for pancakes.  And, there is nothing better than serving them with fresh whipped cream.  Tamara says: This is one of my fast and favorite go to's.

Ingredients:

4 crisp, tart apples, cored and diced or sliced per preference
Healthy pinch of cinnamon
Pinch of nutmeg
Splash of vanilla
1/2 cup water

Recipe:
Serves 2-4 

Place all ingredients in a medium saucepan.  Bring to a boil and simmer 15 minutes with the lid on or until the apples are soft.  Keep an eye on the water level, adding more if necessary. There is no need to peel the apples or to add sweetener.
