Valentine's Hot Chocolate Chip Cookies
Life may be like a box of chocolates, but better still, and with way more certainty to please, is our Valentine's chocolate chip cookies. Our cookies are built on the classic recipe using the best ingredients we can find, and taking it up a notch with three kinds of chocolate for the chips, and toasting the nuts before baking. We use two kinds of brown sugar, each containing lots of molasses flavor, and it just gets better the more creative you become. You can choose to brown your choice of butter, if you plan ahead, bringing even more nutty flavor to the mix. Or, you could go full cowboy and start throwing in all sorts of stuff. What ever you fancy. Oh, and don't forget, some like it hot! Happy Valentine's Day.
Ingredients
(12-14 medium cookies)
1 cup organic flour plus 1/8 cup
1/2 tsp. baking soda
1/2 tsp. sea salt
1 stick butter of your choice (we use Miyoko's vegan salted butter)
1/2 cup Muscavado light brown sugar
1/4 cup Muscavado dark brown sugar
1/2 tsp. vanilla extract
1 organic egg
aprox 6 oz chocolate chopped into pieces (we used three chocolates from milk with caramel bits to 70% dark)
3/4 cup walnuts
flakey sea salt for topping
Recipe
Preheat oven to 375 degrees. Toast walnuts over low heat in a dry pan until they brown and nutty flavor intensifies. Set aside to cool. Add flour, baking soda and salt together in a bowl. In a larger bowl, cream softened butter with brown sugars until smooth. Add vanilla and beat in one egg. Chop six or so ounces of various different percentages of your favorite chocolate bars into small and medium sized pieces, or you can use different types of chocolate chips. Break or chop walnuts into mostly large pieces. Gently mix the flour in three parts into your butter mixture. Fold in chocolate chunks or chips or combo, then fold in the nuts. Line a cookie sheet with parchment paper. Using a tablespoon, scoop cookie batter onto your sheet with two scoops per row. Add a few sea salt flakes to the top of each cookie, unless you prefer not to use. Bake for nine minutes or until golden, but still gooey. Transfer cookies to a rack to start cooling. Let cookies cool for a bit, even if you want to serve warm so that their flavor peaks. Happy Valentine's Day.
