Overnight Oats

 Shaken Not Stirred

This recipe for overnight oats is a work in progress. And, it's really good! The hunt for absolute perfection--usually called the enemy of the good, is still our elusive goal. Inspired to recreate some spectacular oats we had eaten in a gourmet breakfast place, the deconstructing and recreating began.

This current recipe From The White Lotus Kitchen will already be many people's version of perfection. As stated, it's damn good. Half the fun of creating our oats is eating all the variations while subtly adjusting the ingredients. Truly, this recipe lends itself to tons of creativity so take it wherever your palate roams. But, we have provided a few little tricks that take the guess work out of the equation for you. Things like these oats definitely want to be lightly shaken, not stirred.

If we ever hit absolute perfection, we will share the recipe again, but in the meantime, we think you won't be disappointed.. Top of the mornin' to ya!

Ingredients
1 cup whole grain milled oats (organic if possible)
1 13oz can of organic coconut milk
2 Tbs. organic chia seeds
2 large pinches of unsweetened shredded coconut
2-3 Medjool dates, chopped
a pinch of sea salt
1 Tbs. hazelnut butter (or nut butter of your choice)
possibly, a splash of oat milk

Recipe
Place one cup of oats in a large glass container suitable for storing in the refrigerator. Sprinkle two good-sized, large pinches of unsweetened, shredded coconut into the oats. Add a pinch of salt. Hand- toss these dry ingredients in the bowl. Then sprinkle two tablespoons of chia seeds over the top of the dry mixture. Chop the dates into small bite-sized pieces and place evenly over the oats. Pour the coconut milk over the top of the ingredients and cover. Give the closed glass container a couple of gentle shakes or swirls to make sure the ingredients are mixed. Place in the refrigerator for 8-12 hours. Serve your oats with a tablespoon of hazelnut butter, or nut butter of your choice, in the bottom of your bowl. If you like, add additional oat milk before eating, or we sometimes add a layer of oat milk over the top of the oats midway in the overnight process. Also delicious. Good day sunshine!

Put one ounce of apricot jam in a small saucepan over medium-low heat and mix in a splash of Calvados or apple juice. Add enough to melt and liquefy the jam. Brush the warm jam over the top of your tart when it comes out of the oven, also brushing the sides and top of the crust.

Serve your tart warm or room temperature with crème fresh, vanilla ice cream, whipped cream, or mascarpone. Happy Holidays.
